Feeling like a little extra vitamin C after the holidays? This is immunity in a jar people! I posted this photo on Instagram during Christmas and I received quite a few comments and requests to share the recipe. Anastasija of Grandmother’s Figs is the creator behind this one (a girl after my own heart to say the least!). Check out her blog for some awesome recipes, she is super talented. As soon as I read this recipe on her blog I headed straight to the store to buy a persimmon! (This was my first persimmon purchase and I’m very happy how it turned out.)
I will definitely be making this one again, especially for those days when I feel a cold coming on. It’s so fresh and tangy but still really smooth and creamy. Mmmm! There are good anti-bacterial and anti-inflammatory features from the bee pollen and honey. The fruits are full of vitamin C, bioflavonoids, vitamin A, fiber, and other good nutrients. Vitality and health in the form of a smoothie.
Persimmon Winter Smoothie | Serves 2.
1 fresh persimmon
1 1/2 bananas, frozen
1 large orange
2 cm fresh ginger,
1 cup almond milk
2 tsp bee pollen
1 tbsp almond butter
1 tsp raw honey
1/2 tsp ground vanilla or seeds from 1 pod
2 lemon rings, together with the rind
Blend everything together until smooth. Top with extra bee pollen.
