Good mid-autumn morning! I’m sharing my breakfast with you because this is something I’ve been meaning to make for months and finally got around to making today. I am a creature of habit when it comes to breakfast and I usually don’t like steering away from my signature smoothie. But…a wonderful woman, Dr. Marisa Marciano, told me that bright orange coloured foods (carrots, yams, pumpkins, apricots, cantaloupe, etc.) are very high in nutrients that boost the health of your skin. I’m always looking for ways to make my skin glow, so I put together a pumpkin smoothie recipe that will leave you glowing like a jack-o-lantern…without the awkward orange skin.
1/2 cup (or more) pumpkin puree
1/2 frozen banana
1 small scoop protein powder (I use Vega, the vanilla or chai flavour go well with pumpkin)
1 cup almond milk (I use Earth’s Own Almond Fresh or make my own)
1/2 tsp vanilla extract
cinnamon, nutmeg, & salt (add each according to personal preference, I like lots of spice!)
ice (this is optional, I like really thick smoothies so I add a little extra ice)
1 tbsp chia seeds to garnish
I didn’t use any sweeteners, but if you find you want it more sweet try adding 1 tbsp of pure maple syrup.
