It’s the first long weekend of Summer in a couple days! We’re supposed to have great weather for it. I love this time of year for the many obvious reasons but also because I love eating outside. It’s so relaxing and food always tastes better outside, right? If you’re looking for a fresh and easy recipe to entertain guests or something simple to enjoy with the family, I’ve put together a fresh summer salad that pairs really well with rosé. I can’t think of a better way to enjoy the sunny long weekend! What do you think? Any plans?
Summer Salad:
mixed field greens
roasted corn seasoned with paprika/cayenne
walnuts
sliced avocado
fresh strawberries
crumbled goat cheese
Mix all ingredients together in a large bowl. Add in other favourite toppings and leave out what you don’t fancy. It’s pretty simple!
Dressing:
infused olive oil (I used french walnut)
infused white balsamic vinegar (I used sicilian lemon)
Combine the oil and white balsamic vinegar in a small dish, pour over the salad. I picked up these infused oils at Olive the Senses and I highly recommend trying out their products if you haven’t already. They are absolutely delicious and great for adding to salads, baking, cooking, basically anything!
Any rosé would pair really nicely with this salad. I’ve picked up Honest John’s Rosé from a local BC winery called Road 13. This medium bodied rosé is great quality for the price point ($16.00) and has a lovely palate of cranberry, strawberry, and stone fruit. I’m not a big red wine fan so I like a lighter and easier to enjoy rosé, this one was definitely just that! Also, how cute is the little cap with the tractor and the dog? I love that.
